Running late again and at the last minute it sounded like a good idea to make the sandwich a tic-tac-toe board. Z said he and a friend played with the tomatoes and cucumbers and then each got to eat their respective parts! =)

I’ve been slacking on my bento duties and the kiddo informed me that he really likes the Mickey Nuggets cold. It’s a quick and easy way to make a bento! I hope to get back on track soon.

Tried a bento from the “Just Bento” book, tuna salad and potato salad. For the record, the kiddo wasn’t super excited about this one and most of it came home. Live and learn!

Faster than fast, quicker than quick. I am LIGHTNING! Ka-chow!
I love, love, love using egg sheets. The boy likes them too! They are super easy and handy when you need a weird color (like blue- see Perry, Day 2).

Faster than fast, quicker than quick. I am LIGHTNING! Ka-chow!

I love, love, love using egg sheets. The boy likes them too! They are super easy and handy when you need a weird color (like blue- see Perry, Day 2).

Egg Sheet Recipe:

  1. 1 TBSP water
  2. ½ TBSP corn starch
  3. 1 Egg
  4. Splash of Olive Oil
  • In small skillet pour olive oil. Rub with paper towel to spread smooth and thin. Heat on medium.
  • Mix corn starch into the water and stir until smooth (if you try to pour the water over the cornstarch it will try to separate).
  • Beat egg together (remove the little plug). TIP: Only use the egg white when you need brilliant colors. The yellow will affect the color, red + yellow= orange).
  • Mix cornstarch and egg together, tint with food coloring of your choice.
  • Strain mixture to remove bubbles.
  • Pour mixture into heated pan an swirl around to make thin, smooth and even.
  • Heat for a minute and use spatula or chop sticks to gently lift edge, when it pulls away easily flip and cook for another minute or until done.

Voila! You now have an egg sheet you can use to decorate your bentos, or just munch on!

So this year is going to be a little tricky for bento making because I am traveling quite a bit. Hence the gap in days. This lunch is inspired from my trip to Disneyland and the new Cars Land! Expect to see more cars in future lunches.
